3 lg. eggs
1/2 c. soft butter
1 c. unsweetened pineapple juice
2 1/2 c. unbleached white flour
3 c. grated carrots
1 tsp. soda
2 tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon

1 c. crushed, drained pineapple
1 tsp. cinnamon

Beat together eggs, butter and pineapple juice. Add flour, soda,
baking powder and spices. Beat well. Stir in grated carrots and mix
well. Pour mixture into greased and floured 9×13 inch pan. Mix
drained pineapple and cinnamon and sprinkle over cake mixture. Bake
25-30 minutes at 350 degrees or until brown.
